Origin and history
Red pepper was not grown in Kampot until Gérard Vives appeared. With the same concern for quality and respect for nature that led him to revive the regional production of black pepper, he introduced Farmlink, a challenge to create a strictly natural process that allows the ripe pepper to retain its beautiful red colour even after drying. Over time, growers invented a process that has spread throughout the region, to the delight of every gourmet.Tips and use in gastronomy
It is excellent for seasoning chicken, poultry, white meat, pork knuckle, lamb, warm salads and anchovies. It can also be used as an alternative to black pepper, especially with red meats or fatty fish.
About the taste
The red-brown pepper is very strong and hot. This charming and elegant pepper has hints of baked bread and pasta, citrus fruits, spices and pineapple.
Pepper grinding
The grinding is primarily used to release the full flavour of the pepper. The aromatic molecules are in the core of the peppercorn and the hot ones are mainly on the outside. Therefore, for more pungency, use a fine grind, and for maximum flavour, choose a coarser grind, which will perfectly release the essence of the grain. The pepper must be ground only at the last moment! Strong moments are fleeting ... If you want to enjoy the pepper at its best, do not cook it with the dish for a long time, it will lose its strength.
